Bump cookie and @auth/prisma-adapter

Removes [cookie](https://github.com/jshttp/cookie). It's no longer used after updating ancestor dependency [@auth/prisma-adapter](https://github.com/nextauthjs/next-auth). These dependencies need to be updated together.

Updates `@auth/prisma-adapter` from 1.6.0 to 2.8.0
