pyproject.toml is invalid; fails when install is attempted with UV

I tried to install the latest label-studio-sdk version under a virtual environment managed by UV, and got an error message, which I filed a bug for here: https://github.com/astral-sh/uv/issues/13269.

It appears that the pyproject.toml definition is invalid, and doesn't follow the standard for the file format.
