TechEmpower/FrameworkBenchmarks: Upgrade ultimate-express to v 2

On https://github.com/TechEmpower/FrameworkBenchmarks ultimate-express use version 1. Upgrade to node 24 and ultimate-express v 2 has better performance.

I have tried to make a PR TechEmpower/FrameworkBenchmarks#9928 but I don't understand why it keeps installing ultimate-express v1
