[core] introduce auto classes for T2V and I2V

We have a bunch of T2V and I2V pipelines now. I think it makes sense to introduce auto classes for them.

@sayakpaul Sorry I missed the ping before, yes I'll take it. On a related note, should we extend AutoModel to work with transformers' models?

I think it's better to have the separate here as transformers already has a bunch of Auto classes and people seem to be familiar with them generally.

We already do similar to this for BitsAndBytesConfig so yes I think it's ok to keep separate.
