beet is not compatible with python 3.14

As reported by this help thread, beet is not compatible with python3.14 since pydantic v1 is not build for this python version :

https://github.com/pydantic/pydantic/releases/tag/v2.12.0

We need to update every parts that use pydantic.v1 to be using pydantic v2 !

More and more people are experiencing this issue because they install the latest available python version.
This issue should be labelled high priority imo
