`latency.md` does not reflect changes to active expire cycle since Redis 6

Hi,

It looks like the Redis active expire cycle was rewritten starting from Redis 6, and it's internal behavior has changed a bit.

However, the current description in the docs still appears to be based on the pre-Redis 6 behavior.

I think this part of the documentation might cause a little confusion for users.
If possible, would you consider updating the doc to reflect the new behavior?
