[CLI] Document new `thv proxy stdio` command for stdio-only clients

Currently the docs refer to using the remote-mcp npm package for stdio-only clients (https://docs.stacklok.com/toolhive/reference/client-compatibility#stdio-only-client-configuration).

With stacklok/toolhive#1236, ToolHive can handle this scenario natively using `thv proxy stdio`
