Use local API/custom api endpoint

I'm trying to get this extension working, with a local, OpenAI compatible api. On vscode there was a workaround, to set overrideProxyUrl and testOverrideProxyUrl but it is not working for me with this extension.

My current configuration looks like this:

follow the https://github.com/zbirenbaum/copilot.lua#server_opts_overrides is not working for me, and I try these code also not working.

I also encountered a similar issue. What worked for me was setting the environment variable GH_COPILOT_OVERRIDE_PROXY_URL. After making this change, everything started working correctly.

If you haven't already, you can try setting the environment variable as follows:

For a Linux/Unix system:

export GH_COPILOT_OVERRIDE_PROXY_URL="http://raspberrypi.local:8181"

For Windows (Command Prompt):

set GH_COPILOT_OVERRIDE_PROXY_URL=http://raspberrypi.local:8181

For Windows (PowerShell):

$env:GH_COPILOT_OVERRIDE_PROXY_URL="http://raspberrypi.local:8181"

This resolved the issue for me. Let me know if it helps on your side.
