Granularity is a good consideration. Having our choices map to some other organizations grouping is ideal because we can better compare data. I think if we are going to consider adding a single country, we should instead ask if we want to switch to asking about countries instead of regions. And if we do consider switching, how would that improve meaningful information we could extract from the data

I suggest instead shrinking the options down to at most 7-8, there was a lot of feedback last year that these small distinctions were confusing to a lot of people. Also the question is what do we even want to gain from this data? I think a very rough estimate on where people largely come from is enough. For contrast, there's very detailed information on origin of contributions here: https://ossinsight.io/analyze/NixOS/nixpkgs#repository

Just to nit and like you pointed out this is contributor data; we don't have this for the whole community. I am really struggling to think of anything meaningful we could gain from more granular geography. If people found the distinctions considering, I'm amenable to change it
