Docs: Update AMQ Streams references to Red Hat Streams for Apache Kafka

Addresses #127

This PR updates documentation references in README.md, replacing
“Red Hat AMQ Streams” with “Red Hat Streams for Apache Kafka”
in user-facing documentation.

Hello @ak4shravikumar thanks for the contribution but I can't merge it. As you have only fixed the README file but the whole repository/collection contains various amq streams keywords. Just do a grep -Ri "AMQ" and search for the presence.
I'll request you to resolve all the occurrence.

Thank you for the review and guidance. I have searched the repository using grep -Ri "AMQ" and updated all occurrences of “AMQ Streams” to “Red Hat Streams for Apache Kafka”, merged the changes from my first PR into a single branch, and consolidated all changes into one commit to address the CI feedback. The PR now contains all fixes in a single branch/commit, and if anything still fails in CI, I will continue to resolve it promptly.
