move from 4.4 to 5.0 mongo image so to be able to build

I've forked it in https://gitlab.com/opencity-labs/mongodb-backup-s3, where there is the ARM version, too |

move from 4.4 to 5.0 mongo image so to be able to build
(with 4.4 it does not build anymore, due to apt fail: NO_PUBKEY 656408E390CFB1F5)
