[P1] Provide required website and avatar URIs for new author

The new joanneshin-openai entry leaves website: and avatar: blank. The authors.yaml file is validated against .github/authors_schema.json, which marks both fields as required strings with URI format. Leaving them empty causes schema validation to fail and will break the build or block publishing of this entry. Populate these fields with valid URLs or remove the entry until the data is available.
