This PR adds Mermaid MCP Server to the registry.

One tool (validate_and_render_mermaid_diagram) to rule it all.

Side note: Tried to package hustcc/mcp-mermaid with dockyard, but tripped on Playwright with Alpine (https://github.com/hustcc/mcp-mermaid/blob/main/package.json#L16) ¯\_ (ᵕ—ᴗ—)_/¯

hey @JGalego it looks like our CI has issues running from forks. To validate the hypothesis I opened PR #339 grabbing your content, just to verify if CI works.

@JGalego I merged PR #339 so that your MCP server is merged and can be tested. I also opened issue #341 to get to the root of this.
