🧹 Update Python version support: add newer, drop older

Update Python versions to align with the recommendations in https://devguide.python.org/versions/.

Update the docker package to version 7.1.0, as the 6.xis incompatible with the requests 2.32.x.

Revert #115 as we no longer support python 3.7
